A traditional dish from Vicenza but also from Veneto.
The secret for it to be well tender, in addition to being first-rate, it must be well beaten to defibrate and
subsequently soaked in cold water and changed several times during the day.
Having done this it is lightly floured and then proceeded to be cooked.
